Ingredients:

2 cups of rice
1 cup of urad dal
1/2 teaspoon fenugreek seeds

2 green chilies (finely chopped)
1 teaspoon ginger (finely chopped)
10-12 curry leaves
1/2 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
2 tablespoons oil
Salt as per taste
2 tablespoons fresh coriander leaves (finely chopped)
Method
To Prepare Dosa Batter:
- Soaking: Rinse and soak rice, urad dal, and fenugreek seeds separately for 4-5 hours.
- Grinding: Grind the soaked rice, dal, and fenugreek seeds with water to make a smooth batter. Let the batter ferment overnight or for at least 8 hours.
- Mixing: After fermentation, add salt to the batter and mix well. If the batter is too thick, add a little water to achieve the right consistency.
To Prepare Potato Masala Filling:
- Tempering: Heat oil in a pan. Add mustard seeds. Once they start to crackle, add curry leaves, ginger, and green chilies.
- Onions: Add onions and sauté until they turn golden brown.
- Spices: Add turmeric powder and red chili powder, and mix well.
